Here’s a delicious, healthy salad that can be expanded to accommodate a large crowd. Not only is it tasty, it’s full of colorful and immune-boosting foods — always a plus. Enjoy!
2 c organic spinach or mixed baby greens
2 ribs organic celery*, chopped
1 c walnut pieces
3/4 c fresh organic blueberries
2 organic mini cucumbers, sliced
4 TB fruity dark balsamic vinegar
1/4 extra virgin olive oil
Salt to taste
Substitutions & additions:
Use any combination of tender greens that you like, and don’t forget: finely chopped flat leaf parsley (an excellent source of Vitamin C) is a wonderful and often overlooked addition to many recipes.
A diced organic* Granny Smith apple stretches and sweetens the salad.
You can use any nuts you like; almonds are more digestible after soaking in water overnight in the refrigerator.
No blueberries? Use other berries, or dried wild blueberries. I love this salad with blackberries.
Add more celery and/or cucumber for a bigger crowd.
Add broccoli or cauliflower florets, or other vegetables to your taste.
Add goat, Feta, or blue cheese.
My favorite: add poached salmon to make this into a meal in a bowl.
The constants are the greens, the fruit and nuts, and the fruity balsamic: that makes all the difference!
