You just can’t have too many soup recipes!  I particularly like this one, though.  Here’s why:

– It’s based on ingredients I usually have on hand.
– It’s easy.
– It’s delicious.
– It keeps well.
– It’s a great background aroma for Saturday morning chores – hence the name.


1. Heat a soup pot over medium heat.  Add 2 – 3 TB olive oil, then the following ingredients:

– 2 large cloves garlic, finely chopped
– 1 medium – large sweet onion, chopped
– 4 carrots, peeled and chopped
– 4 ribs celery, chopped
– 1 – 2 handfuls fresh green beans, trimmed and chopped
– 1 yellow or red pepper, chopped

2. Let soften, stirring regularly.  Then add:

– 1 quart chicken, beef or vegetable stock
– 1 quart filtered water
– 1 1 lb. can diced organic tomatoes in juice
3. Season with basil, thyme and oregano.  Cook at a low simmer until done to taste.  Season with salt & pepper, and an optional squeeze of lemon.  Garnish with parsley if desired.


Add leftover cooked rice or beans.
