This is not gluten or dairy free, but it’s fast, nutritious and delicious. It’s hearty, but not heavy, and can provoke an appetite in those of us who are a little “breakfast-reluctant”.
It’s based on pre-baked Granny Smith apples (chop in large pieces and bake at 350° for 20-30 minutes). These are great spread with nut butter, or paired with cheese or nuts. They’re also a nice finish to a meal on their own.
Cut up pieces of cooked apple; add a few tablespoons of unsweetened organic Greek yogurt. Top with 1–2 teaspoons of granola* and 5–10 raw nuts of your choice.
I like to use Brazil nuts, as they’re rich in selenium (needed by your thyroid). They are oil-rich, so I store them in the refrigerator, to preserve freshness and taste.
*Most granola is loaded with sugar and dried fruit. Either make your own low-sugar version, or shop carefully at your local health food store, comparing ingredients and nutritional information.
